Vegan Pizza Grilled Cheese

Today we’re making the best Vegan Pizza Grilled Cheese! It’s super simple, and quick to make. Here’s what you’ll need to begin!

  • Miyoko’s Classic Double Cream Chive Cheese Wheel

  • Miyoko’s Vegan Butter

  • Field Roas’s Creamy Original Chao Block (shredded)

  • Marinara Sauce

  • Garlic

  • Crimini Mushrooms

  • Tomato (I used a Roma tomato)

  • Fresh Basil

  • Fresh Rosemary

  • Oregano

  • Chili Flakes

  • Pumpernickle Bread (or whichever you prefer)

First, you’re going to chop up the garlic, tomato, and mushrooms. Set aside in a small bowl. Heat a skillet to medium heat with a couple of tablespoons of vegan butter. Toss in the chopped garlic, tomatoes, and mushrooms. Add a sprig of fresh rosemary and cook for a few minutes. Once done, set aside in a small bowl.

Grab your sliced bread and spread some butter on them. Then spoon on some marinara sauce. Not too much, or it’ll spew out the sides. Spoon on the chopped garlic, tomatoes, and mushrooms. Add some Miyoko’s Classic Double Cream Chive Cheese, as well as the shredded cheese. Break up some basil on the cheese, sprinkle some oregano, and some chili flakes. Top with the other slice of bread.

Heat the skillet again to medium-low heat. Add two tablespoons of vegetable oil. Once hot, place the sandwiches in the pan, press down, and cook for about 3-4 minutes on each side. Once done, place them on a cutting board to slice them in half, or put them straight on a plate. Definitely let these cool for a bit, because they’re super hot on the inside!
